A Micronutrient rich cake

Looking for something different to make?  something high in nutrients? a very healthy alternative that again is very nice to eat and very easy to make?

Then try my micro nutrients cake.


I have a recipe for a nice easy Irish barm brack, which basically is a
1lb flour (Iused a mix of normal SR flour, buckwheat flour and coconut flour)
6oz sugar I use coconut
12 oz hot tea
8 oz dried fruit (of your choice. if turning into a micro nutrient cake then add 12 oz)
1 teaspoon mixed spice
2 teaspoon baking powder (only need 1 if using all normal white SR flour)

soak the dried fruit in the hot tea for 2 hrs.

Mix all ingredients together and cook for 45mins at 160 oC.


Decided I would add some goodness to it in the form of zinc, omega 3 and 6, magnesium, calcium, potassium, vitamin, copper etc etc.

sunflower seeds
sesame seeds   
pumpkin seeds 
poppy seeds    
dates                
apricots  (chopped and added with other dried fruit)        
flax seed      
figs     (chopped and added with other dried fruit)          


and so my micro nutrient cake was born, give it a try and enjoy. You can either just shove in a few spoonfuls of each as is or put them through a blender and mush them to a pulp before using them.
